Bringing Butter Canvas to the bench

Bringing Butter Canvas to the bench

Butter Canvas began quietly. There was a corner of the MORI kitchen, a list of occasion cakes Caridee wanted to make, and a single question: could we do this properly alongside the café? The answer, it turns out, was yes, with a waiting list to prove it.

Butter Canvas is MORI's in-house cake studio in Blackburn, Melbourne. We make design-led celebration and occasion cakes to order, pre-ordered through our enquiry form and picked up from the café. Here is how it started, and how to order one.

Where Butter Canvas started

MORI opened as a neighbourhood speciality coffee café. Good light, a long bench, Market Lane on the bar. The cakes were never meant to be a separate business, but they were always going to happen, because Caridee brought a Japanese patisserie background through the door with her.

That background matters more than it might sound. Japanese patisserie is a discipline built around restraint. Lighter creams, less sugar, precise structure, and a finish that looks considered rather than decorated. It is a very different instinct from the tall, sweet, heavily iced celebration cake most of us grew up with.

So the question was not whether Caridee could make occasion cakes. It was whether a working café kitchen could hold a second craft to the same standard. Cakes are unforgiving. They need cold storage, clean bench time, and a diary that does not overpromise. We decided that if we could not do it properly, we would not do it at all.

What "design-led" actually means

Design-led sounds like a word we put on a website. In practice it means one rule: flavour first, then form.

A Butter Canvas commission starts with the occasion rather than a photo. Who is it for, what are you marking, how many people are eating, and what do they actually like. From there we shape a flavour direction, then a design that suits it, working within a seasonal palette and a Japanese-inspired aesthetic. Clean lines. Considered finishes. Nothing added that does not earn its place.

The commission ends at the bench in Blackburn, when you collect it. That whole arc, first enquiry to pickup, sits with the same small team. No handoffs, no couriers, no cake arriving somewhere we have never seen.

How to order a celebration cake from Butter Canvas in Melbourne

The process is short and deliberately human.

  1. Send an enquiry. Fill in the Butter Canvas form with your date, occasion, guest numbers, and any flavour or design direction you have in mind.
  2. We confirm availability. We take a limited number of cakes each week, so dates are the first thing we check. We aim to respond to all enquiries within two business days.
  3. We come back with a design and a quote. Flavour, structure, finish, and price, so you can approve before anything is booked.
  4. We make it to order. Nothing is made ahead or held in a display case.
  5. You collect from MORI. Suite 2/1 Main St, Blackburn VIC 3130.

Lead times: fresh cream cakes need at least 2 days' notice. Custom cakes need at least 2 weeks. Weekends and peak occasions go early, so the more notice you give us, the more we can do with it.

Butter Canvas serves metro Melbourne customers, pickup only.

Why pre-order and pickup only

We get asked about delivery often enough that it is worth explaining.

Fresh cream cakes are at their best the moment they leave the bench. Every hour after that, and every kilometre in the back of a van, is working against them. We would rather hand you a cake in the condition we intended than gamble on a drop-off window.

Pre-ordering does the same job at the other end. Capping how many cakes we take each week is what lets the standard hold, and it is why the diary fills the way it does. It is a small constraint that protects the thing you are actually paying for.

What Butter Canvas makes

The range moves with the season, but the core of it is consistent:

  • Mousse cakes, light-set and layered
  • Chiffon layers, fresh cream and Japanese-inspired, the same fluffy chiffon MORI regulars know
  • Entremets, for when the occasion warrants the extra structure
  • Bespoke celebration builds, designed from scratch around your brief

Birthdays, anniversaries, baby showers, weddings, and the dinners that quietly deserve something better than a supermarket shelf. If you are not sure which style suits your occasion, say so in the enquiry. That is a question we like answering.

Have a date in mind?

Tell us about it. Send through the occasion, the date, and how many people you are feeding, and we will come back with availability and a quote.
